Girl Scout Cookie Recipe - Savannah Sunset Curd Parfait
Got Tangy? Savannah Sunset Parfait made with Curd and Savannah Smiles Girl Scout Cookies
This is a delicious tangy recipe that captures of the common tangy flavors of Meyer Lemons, Ruby Red Tangerines and Savannah Smiles Girl Scout Cookies. This recipe is medium level of difficulty, but really easy to execute once you have the technique mastered.
I have always loved Savannah Smiles Cookies, which are zesty lemon cookies, dusted with powdered sugar. This recipe enhances the cookie’s flavors and tames the tangy flavor of the citrus curd.
The fruits I have highlighted in this recipe is the Ruby Tango tangerine, which is a tangerine with red flesh. It is similar in sweetness to the blood orange, but retains the medium tartness of a tangerine. The other fruit is the classic Meyer lemon, the quintessential lemon for cooking due to it’s aromatic zest and sweet juice.
Both ingredients are perfect to create a tangy, yet balanced curd for the recipe. Thanks to my friends at Melissa’s Produce for introducing me to the Ruby Tango Tangerine.
Ingredients
Makes approximately 8 servings, depending on preparation
Meyer Lemon Curd Ingredients
- 6 Egg yolks (beaten)
- 1/2 Cup white sugar
- Approximately (8) Meyer Lemons
- Zest lemons to create 1 1/2 teaspoons of zest
- Juice lemon, enough to make 3/4 cup of juice.
- 1 tablespoon Grand Marnier (optional)
- 1 Tablespoons cornstarch
- 1/2 cup butter
Ruby Tangy Tangerine Curd Ingredients
- 6 eggs yolks (beaten)
- 1/2 Cup white sugar
- Approximately 9 Melissa’s Produce Ruby Tango Tangerines.
- Zest to create 1 1/2 teaspoon zest.
- Juice tangerines, enough to make 3/4 cup juice.
- 1 tablespoon Grand Marnier
- 1 Tablespoons cornstarch
- 1/2 cup butter
Parfait Ingredients
1 Box Savannah Smiles Girl Scout Cookies.
1 Can Ready Whipped Cream or make your own (You fancy huhh?)
1/2 Cup Powdered Sugar
Approximately (8), 8 Ounce Mason Jars
Instructions
Making the Curds
1. Repeat the process the same for both Meyer Lemon Curd and Ruby Tango Tangerine Curd. In a saucepan, combine juice, sugar, zest, Grand Marnier, and cornstarch. Heat over medium heat until it begins to bubble.
2. Remove mixture from heat and pour one quarter of the mixture into the beaten egg yolks.
3.With the pan remaining away from the heat source, reintegrate the egg mixture into the pot. Thoroughly combine the eggs and juice mixture.
4. Add the butter into the pot, continuously steering until the butter is fully melted and blended.
5. Turn the heat back to medium, and cook the curd mixture until is begins to slightly boil. Remove from heat.
Assembling the curd Parfait
1. Cut the Savannah Smiles Girl Scout cookies into quarters.
2. Place (2) cookies worth of Savannah Smiles on the bottom of the jar.
Dust with powdered sugar
3. Cover the cookies with whipped cream
4. Cover with Ruby Tango Tangerine curd
5. Place (2) cookies worth of Savannah Smiles quarters over the curd
6. Cover with whipped cream
7. Cover with Meyer Lemon curd
8. Garnish top with quartered Savannah smiles and decorate with whole Savannah Smile Girl Scout Cookies.
Repeat until you run out of ingredients
Recipe Variation
Add alternating layers of Banana pudding for a less tangy flavor.
